Ingredients:
Half a bag of fresh nettle leaves (top few leaves only)
6 large celery stalks
2 shallots
1 onion, peeled & chopped
4 sprigs of thyme
6 garlic cloves ( or wild garlic leaves at this time of year)
2 tbsp olive oil
2 medium potatoes
1 carrot
Organic Vegetable stock
½ tsp ground cumin
Salt & pepper to taste
Coconut milk (or any milk)
How to Make It:
Sauté onion, shallots, garlic & thyme in olive oil until soft.
Add chopped potatoes, carrot, celery & cumin, cooking for 5 mins.
Pour in vegetable stock, bring to a simmer & cook until veggies soften.
Add nettle leaves, cook for a few minutes, then blend until smooth.
Stir in coconut milk (or any milk) season to taste & enjoy!
